Le blues du supermarché

Ce n’est pas par hasard si notre alimentation devient un sujet politique, avec quatre initiatives fédérales en chemin. Mais comment faire ses courses quand on se préoccupe de sa santé ou de l’environnement? Reportage dans un supermarché de Lausanne.

Des aliments pleins d’additifs mystérieux. Des produits hors saison venant de l’autre bout de la planète (et si beaux qu’on pourrait les croire en plastique). Des étiquettes en tout genre, bio ici, équitables là, comment savoir ce qu’elles valent? Et la masse des autres produits, n’est-elle donc ni naturelle, ni respectueuse des animaux ou des producteurs?

Pour beaucoup de consommateurs, soucieux de leur santé ou d’éthique, faire les courses dans une grande surface est devenu un casse-tête. Qui a déjà lu l’Ordonnance fédérale de 2005 sur l’étiquetage des denrées alimentaires qui s’étale sur 169 pages? Qui s’intéresse véritablement au contenu de son assiette?

Peu de monde selon le dernier Rapport sur la nutrition en Suisse, publié en 2012 par l’Office fédéral de la santé publique (OFSP). Un tiers de la population avoue par exemple ne jamais se préoccuper de son alimentation. Il s’agit principalement d’hommes, jeunes et au niveau de formation peu élevé. Pire, la majorité des Suisses ne suivent pas les recommandations alimentaires, notamment la consommation cinq fois par jour de fruits et légumes.

A qui la faute? Au manque de «prise de conscience alimentaire» du chaland ou à l’opacité du marché? «De nombreux consommateurs», relève un peu plus loin le rapport, «jugent l’étiquetage alimentaire trop confus, voire incompréhensible.» J’en fais partie.

Consommateur moyennement averti, je sais que les aliments industriels contiennent des additifs douteux: émulsifiants et antioxydants (E300), colorants (E100), agents conservateurs (E200), «autres» dont les édulcorants (E400-E1521), il y en a des centaines qui sont autorisés. Je sais que l’agriculture se sert abondamment de pesticides, mais qu’en reste-t-il dans ce que je mange? Je sais qu’il existe des contrôles sanitaires. Mais comment sont-ils faits et sont-ils suffisants?

Pour trouver quelques réponses, je me suis rendu, un matin de début mai, dans une Coop de taille moyenne, située Sous-Gare à Lausanne. Pourquoi avoir choisi ce distributeur-là? Parce que c’est le numéro un en Suisse. Et parce qu’il promet de la qualité dans toute sa communication. «Nous voulons que manger soit un plaisir sain», affiche son site. Nous n’avons eu aucun contact préalable avec la Coop, et bien sûr nous n’avons aucun contrat publicitaire à la clé.

Ce petit voyage dans l’univers alimentaire va s’avérer sans fin: impossible de tout savoir sur ce qu’on mange. Même en cherchant des informations complémentaires sur mon téléphone portable…
